Mr. Darcy's Dinner or the Dinner Which Never Happened

A menu of 2 courses and a dessert course or tea-board suitable for a country gentleman and 10-12 guests in summer. There are 9 dishes in each course.

1st course: White soup, plaice, garnished dressed lamb, chicken with tongue, fricassee of turnips

Side dishes: Buttered prawns, asparagus Italian style, macaroni, sole with wine & mushrooms, broccoli served hot.

2nd course: Pheasant a la Braise, ragoo of celery with wine, forcemeat balls, wine roasted gammon (served cold)

Side dishes: Apple pie, marmalette of Aprecocks, jaune mange, trifle, ice cream

Dessert: Almonds, raisins, preserves

Teaboard: Tea, negus, rasbpberry cordial; apple puffs, fine cake, lttled iced cakes, ratafia cakes; Naples biskets
