What is dutched chocolate?

Caroline, I have heard of dutched chocolate without giving it much thought. What does one do to chocolate to make it dutched?
Also, I almost checked out a book at the library about the history of spices but didn't because I had such a large stack already. You probably already have this book but in Christopher Hibbert's The English: A Social History 1066-1945, he states that chocolate first came to England in 1652 and " sometimes drunk enriched with eggs, sack and spices." Please don't ask me what sack is!!! I couldn't find any thing about choclate being bought ground or in beans.
