In addition to what you've already mentioned, there were Punch & Judy shows, amateur plays, cudgeling bouts (similar to quarter staffs), Phantasmagoria and Raree shows (both optically oriented)and tugs of war. You might also find a couple of "roundabouts" (children's rides - I have a print from 1808, which shows a hot-air balloon roundabout ride for children)--there were even ferris wheels. There were also magicians, and let's not forget strolling musicians, etc. This is what I can think of off the top of my head. If I think of anything more, I'll post it.
