Regency fairs and shows

Can anyone tell me - or put me on to a good resource - about the likely attractions and stalls at a fair, show or May Day celebration during the Regency period, please?
There'd be a lot of horses, and no doubt a few wandering pedlars of ribbons and trinkets, but what else?
Were there any games and contests of strength (apart, perhaps, from boxing)?
