Sir William was knighted after he did some service or made an address to the Crown when he was mayor of Meryton, before his retirement from successful business. A knighthood is not a title, as such; rather, it is a rank, and is not hereditary. I left a message with the basics about titles and address somewhere below on this list, and for more complete informantion Laura has a web page full of detailed information. I'd provide a link, but my browser is acting up and won't let me access it. *sigh*
