According to "Miss Manners' Guide for the Turn of the Millenium":............a gentleman who kisses the air above a matron's hand (never an unmarried girl"s) in the european equivalent of a handshake........."
The book was copyrighted in 1990. I don't know if the protocol has changed in the last 150 years.(by the way the correct response from the lady is to nod her head pleasantly and smile.)
