Stocks and cravats: another question

With the various threads around about stocks and cravats, I'm now wondering when did the gentleman wear the stock? When was just a cravat more appropriate? Why would you ever where both?! And since the proper gentleman was supposed to take so many with him, when was he to wear a white one vs. a black cravat?

Oh these pressing questions of great consequence! :)
