Who sits at the head of the table?

In my family gatherings at least, the "male patriarch" sits at the head of the table and carves. Understandably, Lady Catherine sits at the head of her table and Mr. Collins, who carved, had the honor to sit at the foot. However, in the novel Mrs. Bennet sits at the head of her table. "It was a fortnight since Mrs. Bennet had been down stairs, but on this happy day, she again took her seat at the head of her table." I assumed Mr. Bennet at the head!
