This all got me very curious, so I hauled out an old (and lately disused) Craig Claiborne NYT Cookbook and found Cucumber Sandwiches situated right between Avocado Canapes and Rolled Watercress Sandwiches, two other favorites of mine workers and truck drivers.
The watercress ones are made with chopped watercress leaves or thin slices of scallions and rolled up with butter, cream cheese or Roquefort of petit Suisse cheee with thin slices of bread like a jelly roll, and refrigerated.
