] ] Here's a recipe from The Original Boston Cooking School Cookbook by Fannie Merritt Farmer (1896).

Very quickly- because this is more complicated than it seems- a moderate oven is one roughly 325-350deg.F, 170deg.C, gas mark 3.
(And before I attempt a full explanation, does anyone here cook in any other temperature measurement, like deg. Kelvin?)
