The way the edges of the sleeves are done - what is that called?
It's called "drawn thread" work. It's a very tedious and delicate task (by hand), but with such a beautiful result. You pull threads in fine fabric (like Irish linen, muslin, organdy, etc.) in a precise pattern, and it leaves a neat design. My great-grandmother knew how to do this. Wish I did!
