In Emma, when the John Knightleys come from London for Christmas with their five children, they bring "a competent number of" baby-sitters (I can't remember the exact term, sorry). However, they had to do that, since Hartfield didn't have servants to care for five children who came for a few months out of the year.
But as to the expense of two sets of servants, "Jane Eyre" as governess got 30 pounds per annum, and most servants got ten pounds, so Mr. Darcy could afford one or two servants, I think. :->
