This is really interesting and fun! I never realized that there was another way to read the passage than the way I was reading it. It never occurred to me that Henry might deliberately be describing Catherine. I always thought he was being sarcastic about Isabella, and listing attributes that she did not have. Eleanor recognizes that his sarcastic description of Isabella actually describes Catherine. Eleanor's remark then serves to point out to Henry that he actually has described Catherine, as well as telling him that Eleanor would like to have Catherine as a sister-in-law. That's my take, anyway, but I am perfectly ready to say that the other interpretations also fit.
