Mr. Bennett, as Darcy points out quite well, can lack a sense of how to act graciously. He is quite the opposite of someone like Mr. Collins or Sir Lucas who overdo the praise. I think JA is saying not only if "you don't have something nice to say about someone, don't say anything at all" (for Mr. Bennett), but also something about not leaning too far to the other extreme. Lizzy does have a tendency to be more like her father, but fortunately she couches her comments well. Perhaps too well, in that Darcy does not take them as clues that she is not really interested in him.
