To the best of my understanding, a green goose was one that had been 'hung' (by the neck, ideally in a dry pantry) for several days to let decomposition proceed to the stage where the bird was tender enough to eat. With a farm-yard bird such as a goose this should only be a few days. I am told that 'game' birds would be hung until the body and the head parted company, and the meat truly was green, but this may be an exageration.

Can you blame the creature for his distrust of green eggs and ham?
