] OK, so i could be completely blind as to its purpose, but what exactly is the point of the little scene in Emma2, at the ball, just after Mr Knightley has danced with Harriet. There is that little scene where Emma goes 'in search of' Mr Knightley, and (of course) finds him, and they walk off together, etc...

Oh my! I'm not sure if your referring to the little bit you mentioned or including the discussion that follows. If you are including the discussion, it is an imperative scene! For this is where Mr. Knightley confronts Emma about her previous plans for Mr. Elton. More importantly though, it is where they really begin to see each other in a different light.
If you are talking about the small portion of the scene where they walk out to the terrace, I think it is also important. How dull a movie would be if it weren't for the small pieces like these. Just one important scene after the next -- you need a bridge of some sort. That particular bridge gives us a wonderful opportunity to see Emma and Mr. Knightley interacting, without having to know what the conversation entails.
