Becuase dating is such a modern term and concept that it does not describe the sort of relationship that was possible between Will and Marianne. Dating IMO means they were seeing each other, away from their homes and families, that they had a fair amount of freedom in what they did, but were not necessarily committed to each other. Society in JA's day was differnet. A couple could not see each other, except under the guardianship and chaperonage and permission of the lady's family. They could not except occasionally see each othter alone. What M and Will had was either a flirtation, in which case it was supposed to be light and "not serious" or a courtship, which was meant to be progressing towards engagement.
