] Was JA's idea of toast the same as ours?

From reading Sanditon, toast during JA's time was the same as ours, except it was toasted over an open flame rather than in a toaster.

I have no idea about the bread. I personally prefer white bread straight from the breadmaker; none of that foamy store-bought stuff.
