]Mrs La Tournelle’s name was actually Sarah Hackitt, ‘but having early in life been engaged as a French teacher, her employers thought it right to introduce her into the school under a foreign name... ‘She could not speak a word of French...'

Are both these statements about the same teacher? If so, how funny! Does her knowledge of the stage imply that she had perhaps been an actress?

I agree with you. Having had her sister with her, I imagine Jane wasn't too terribly homesick, and probably enjoyed her independence and experience of the wider world.
