Some authors have equated eighteenth century "taste" with "ability to discriminate", by which we might imagine that Mary played in a way that showed she understood what interpretations the instrument, the piece and the audience required- in other words she was a sensitive and knowledgeable performer.
However, that's not the be-all and end-all of the meaning of the word. I have linked below the page on eighteenth century "taste" at the Dictionary of Sensibility so that you may look a bit further, if you wish.
