Edward was lonely, and Lucy is pretty and she has a (very) strong personality. Plus, maybe Lucy acting a bit like Fanny was actually comfortable (in a not-so-positive way) for Edward.

Good point, though, that Lucy may figure she has to take over or she'll never have Ferrars as her last name!
