I read these as more of Sir John's perceiving things in absolutes, as we saw him do with Willoughby, who was (in Ch. 9) "as good a sort of fellow, I believe, as ever lived" and had "got the nicest little black bitch of a pointer I ever saw". So now he's talking about CB, and is attributing absolute or extreme characteristics to him. Sir John knows no moderation, and I think it comes through here with no reflection whatsoever of what he actually knows about CB.
