I had a look through the archives, and came up with these posts:

As usual, Julie W. did a lot of very detailed research and explanation in these posts, but I gather that the gist of it was that there was considerable inflation between the late 1700s and the Regency. Julie uses a range of 1790 to 1813 in one example.

S&S was first written in 1795, and Jane Austen did update some things when she got it ready for publication in 1811, although she missed other details, as we will see later. I'm going to look and see if anyone is saying that she updated the financial aspects of the story.

But, it does seem that it might very well be that their old uncle thought 1000 pounds was a much more generous gift than it actually was.
