You may have the solution to Edward's reaction. If reserved isn't generally a bad thing, but he doesn't feel like he should be considered reserved by his friends, then he would be unhappy about what Marianne said. And although Marianne said that reserved was worse than shy, we know she has strong opinions about expression.
