If they stayed somewhere close to Norland, or at Norland itself, Fanny would be there to try to poison Edward's growing affection and get in the middle of the relationship.
I think that if you add this to their general dislike of living at John and Fanny's expense, Mrs. Dashwood's decision seems less an act of pique and more one of active solicitude for Elinor and all of her family.
