] Was there ever an explanation (lame or otherwise) about why Mr. Parrish dropped Miss Kendall?

Don't think we know the real story behind the break-up. Juliet Kendall early tells Elizabeth that Caroline stole Parrish from her. Later though she seems to make an effort to befriend Caroline right after the wedding. Can't say I would have reacted that way..Unless she was up to no good??Hmmm..
