Also in chapter 10--We all know that Mr. Hurst and his wife are borderline vulgar, but nevertheless they practice rudimentary good manners. I was therefore very shocked when he "pulled out a pocketknife and proceeded to slather butter over two crumpets." Maybe it was another knife emerging so soon after the violence done Caroline (which is still mysterious).
