Somehow the Colonel knew Darcy wasn't really into putting himself out to be socially gracious, etc., and accepted or "knew" it wasn't really his nature. The challenge of his being a true gentleman is to act so, even if he didn't really feel like it. So, it's in the actions, as well as the title of "gentleman" that they discuss it, seems like.
