He was at a ball, which is a public place, and Lizzy heard him. Therefore, he insulted her in public.

He turned around to look at her and caught her eye -- and thus knew he had her attention. I don't suggest that he intended Lizzy to hear him, but she did. So clearly Darcy took no care to lower his voice to ensure she would NOT him because he really did not care if some young Meryton miss heard him.

That is NOT the mark of a gentleman.
