Lovely to see an authentic recipe from JA's time for muffins.

I thought coffee a fashionable and expensive beverage in the Regency, yet Mrs Phillips appears fairly lavish in her hospitality. ( I would've thought she'd serve tea).
Coffee and muffins too... Mr Collins must've been a happy man.
