and I used a muslin jelly bag to sieve it-my substitute for a lawn sieve- it worked very well. I used the 1807 recipe from Henderson and Schnebbelies book The Hosuekeepers Instructor or Universal Family Cook

It is a very delicate taste: mine was admired by my guests( or at least they were too polite to demur).
