I think Lizzie is familiar with the allusion but is pushing the metaphor, in a bristly manner to avoid Darcy's confusing her attention with Caroline's. I believe her interruption is also meant to halt her mother's embarrassing references to Jane's old suitor & make sure that Mrs. Bennett's little train of thought is derailed so she can't get it going again.
