I can't help feeling that too much is being read into Lizzy's refusal.

Darcy had made it clear on a previous occasion that she was neither good looking nor good enough for him to dance with. Now he is being put into a position where he has no choice but to ask her to dance, but Lizzy has no desire to dance with a man who feels the way about her that she believes Darcy does. It could be that the simplest explanation is the right one, and that is all there is to her refusal.

In addition, I think your interpretation suggests that Lizzy believes Darcy knows she overheard him, and that she knows he knows, and he knows she knows, none of which is supported in the text.
