but I think the evidence from other places( and I don't want to go into Austenuations terriroy here!!) is that in our era, the importance of gathering in the havest would limit the use of farmhorsses for "other" purposes severly.

The whole point is that Mr Bennet , by keeping only one set of horses for farm use and for pleasure, as this chapter suggests, indicates IMHO hae has a somewhat selfish nature: he may think himself clever by defrauding the excise man, but at the same time he is reducing his familys abilty to use a carraige. Little wonder Lizzy is a great walker........
