1) It might just be more of his brand of teasing. Remember how he handled Bingley, waiting until the right moment to let his family know that he'd called on their new neighbor. Now here comes another single man in possession of -- well, not quite so good a fortune, but still with a respectable income.
2) Perhaps he has a high regard for his wife's household management skills, and knows she can easily receive a guest in less than 24 hours. Indeed, Mrs. Bennet's only complaint about the logistics is that "there is not a bit of fish to be got today".
3) He may not want Mr. Collins to have that great a welcome at Longbourn, so he makes sure that only minimal preparations can be made.
4) He might have anticipated Mrs. Bennet's agitation over "that odious man", so he purposely arranged to delay the onset of her nervous suffering to the last possible moment.
