I am with you in this. Perhaps she has heard from her brother - don't think Darcy would inform her - that Wickham's coming to Meryton was unfortunate. Caroline knows something about Wickham; Bingley would know at least as much and he probably noticed how their chance meeting affected his friend.
So she mocks Elizabeth's appreciation of Wickham and lets her know how unworthy her new acquaintance is compared to Mr Darcy.
A mere steward's son at that!
I don't think Caroline sees Elizabeth as a rival for Darcy's hand. It vexes her that he should admire her at all, but it is not in her book that Darcy would ever seriously consider someone that inferior.
