He only speaks of Lizzy in this manner to Miss Bingley, the person who is least anxious to hear Lizzy's praises. I think that this shows his extreme dislike of Miss Bingley and his desire to inflict a bit of pain upon her. Should Mr. Bingley, for example, ask Darcy what he was thinking, etc., I do not think that he would mention Lizzy at all.
