But in the book "The Making of Pride and Prejudice" the production team mentions that the classiest horses were choses for the classiest characters.

And in previous discussion about this matter, Pemberfolk with more horse sense than I seemed to agree that Darcy's horses were of superior quality to Bingley's horses. Perhaps its a matter of both money and experience (and maybe also judgement?).
