] My impression is Darcy admitted "...snip..." simply because he was accosted by Caroline Bingley who immediately presumed to 'guess the subject of his reverie'.

As we see later, she assumes she knows his thoughts and he contradicts her - this seems a habit of communication with them. For example "I am afraid you do not like your pen. Let me mend it for you." Also in evidence, her jumping in to define an "accomplished woman" assuming she knows exactly what he is getting at.

I think that he just experienced his usual level of annoyance at her "we are such soul mates, I can read your mind" act, and cut her down with a very polite version of "not only are you wrong, you are so wrong!"
