it's actually a deliberate "quirk" that CF devised for Darcy. I interpret it as a manifestation of anxiety rather than boredom - e.g. he's playing with the ring when he and Lizzie have met at Pemberley and he's asking if she would consent to meeting Georgiana - he so wants her to say yes but is unsure of her feelings and therefore her reaction. CF is known for thoroughly researching his roles so I suspect that even little things like this are quite deliberate in bringing the character to life.
