]1) "Mr Bingley might like you the best of the party"

]Is Mr Bennet completely making fun of Mrs Bennet and any vanity she might have left over from former days, or does he still find her beautiful?

She might well still be pretty, but this comment is pure sarcasm, IMO. I read it/view it as "well, the only reason you want to see him is because you think you can make him marry somebody. Since you give him credit for no discretion as to who he marries, best be careful or he might pick you!"

]2) Really, should Mr Bennet have stood up to Mrs Bennet in the matter of the horse for Jane?

Perhaps he should, but remember he also made no strong objection to Lizzie walking the three miles next day. I think that, all Mrs. Bennet's conniving and hoping for rain aside, three miles was not considered a great distance so Jane riding it instead of having the carriage was really not such a big deal. She did say she would rather have the carriage, but I got the impression that it was mostly because of the rain.
