I think this is a case of Mr. Collins going overboard again. Elizabeth and Maria had probably said everything they needed to say (or that normal people would expect them to say) the last time they saw Lady Catherine. I don't know this for sure, but I suspect that ordinarily, they would only be expected to leave a message if they hadn't had a chance to say good-bye to Lady Catherine in person.
