I think she is just enjoying thinking of what might've been a response there--She could surely imagine Lady Catherine's reaction and it probably provided a little diversion from her otherwise conflicting thoughts.

Maybe the first feelings of regret were planted right then, but at that moment I do believe she still despised Mr. Darcy and would not have changed her refusal.
