Pure speculation, but I would guess that he left out the walking and talking together parts to make the proposal scene a bigger shock. It would be difficult, I imagine, to convey on-screen that Lizzy was astonished by his attentions but still thought he disliked her - easier to show him rude and riding away, to give her astonishment at his lover's declaration more "oomph."
