Are you new?

next eldest son/daughter called Miss/Mr. (last name) when the oldest was absent? (I remember Mary Crawford's speech about Edmund being called Mr.Bertram in Tom's absence).

And I imagine it would be cumbersome calling people by their first and last name all the time!..."Miss Lydia Bennet, please be seated next to Miss Kitty Bennet. Miss Maria Lucas will soon join you!"...LOL
