Perhaps Mr. Collins goes to tell Elizabeth about overhearing Darcy because he doesn't want to interrupt Darcy's conversation with the Lady of the House. He hears about Darcy's relationship with Lady DeBourgh and gets so excited he has to tell someone. But not wanting to interrupt Mr. Darcy and Miss Bingley he goes to talk to Elizabeth until Mr. Darcy is available.
