Mr Collins was not playing cards at the table when Wickham & Elizabeth were having their conversation, and he wasn't between the two of them, either. He was talking to Mrs Philips, who was on the other side of him.

From Chapter 16:

The whist party soon afterwards breaking up, the players gathered round the other table, and Mr. Collins took his station between his cousin Elizabeth and Mrs. Philips. [emphasis mine]

I think Mr Collins may have been standing up, or seated sort of outside the circle of card players, between Elizabeth & Mrs Philips. While Mr Collins is occupied with explaining his situation to Mrs Philips, Wickham talks to Elizabeth about Lady C. Mr Collins is the type of person who is so involved in himself, that I hardly think he would hear anybody else's conversation (other than her Ladyship's, perhaps!) whilst he was talking.
