If you look at the context it seems to me clear that he's trying to provoke her. She's been trying to get him to complain about the Mertyon people HE says that- no he's been pleasantly occupied, thinking of a pretty woman and that woman is Liz Bennet. He then listens with "perfect indifference" while she goes on trying to "get him" by saying how awful it would be to be married to a Bennet girl and have the vulgar Mrs B etc as relatives. He has I think reached a stage where he is fed up with Caroline and hopes that by giving her a hint that he at least is attracted to another woman, he is NOT interested in her and never will be.
