I doubt if Darcy told Caroline anything. She is "on Darcy's side" because she is planning and hoping to marry him, so she will naturally defend him hotly EVEN if she knew nothing. And George Wick is merely the "son of a steward" she certainly would not allow him to be "in the right" in any dispute iwht a rich man like Mr Darcy. It IS possible that BIngley having heard something of thte story from Darcy, did mention to her at some stage that Wickham was a bit of a bad lad, but he's probably (being a kindly man) half forgotten the details (not getting a kick from thinking ill of people) whereas to Caroline it is of prime importance that Darcy is seen to be "the good guy" and she stands up for him, even if she knows little or nothing about the situation.
