Nominally, they were cheap, because their wages were low.
But I went at an estate with 25-30 servants and when I read how much butter, beer... were used, I was totally astonished. Of course, a tough master (or housekeeper, as we see Mr Rushwood's in Mansfield Park) could reduce these amounts and I have no doubt that Lady Lucas was able to manage it, but the mere idea could frighten.
